Banana Muffins

 

“What could be more important than a little something to eat?”

These muffins are honestly delicious! They are filling and not too sweet, making them the perfect breakfast or snack.

Makes 12

Ingredients

  • 1/2 cup coconut flour

  • 1/2 tsp baking soda

  • 1/4 tsp Himalayan sea salt

  • Pinch of cinnamon

  • 2 ripe bananas (mashed)

  • 1/4 cup coconut oil (melted)

  • 1/4 cup maple syrup

  • 4 eggs

  • 1 tsp vanilla

  • 1/4 cup chopped pecans

Directions

  • Pre-heat oven to 350

  • Line a muffin tray with liners or grease lightly with coconut oil

  • Mix dry ingredients (except pecans) together in a medium sized bowl

  • Mix wet ingredients in a separate bowl

  • Add wet ingredients to dry ingredients

  • Fold in pecans

  • Scoop into greased muffin tray

  • Bake for 20 mins

You could easily make these nut free by subbing pecans for chocolate chips or dried fruit.
