Blueberry Muffins
“Work hard, snack often”
I go from hungry to hangry pretty quick - anyone else feel me? I always try to have healthy and nutritious snacks on hand for the sake of everyone around me. I found this recipe online and love that it’s something different and doesn’t use bananas.
Makes 12 medium muffins
Ingredients
1 cup + 2 tablespoons oat flour
1 cup almond flour
3/4 tsp baking soda
1/4 tsp Himalayan sea salt
2 eggs
1/3 cup maple syrup
1 tsp vanilla extract
1/2 cup oat milk
1 tbsp olive oil
1 tsp fresh lemon juice
1 cup blueberries
Handful of chopped pecans (optional)
Directions
Pre-heat oven to 350
Line a muffin tray with liners or grease lightly with coconut oil
Toss blueberries in 2 tablespoons of oat flour and set aside
Mix dry ingredients together in a medium sized bowl
Mix wet ingredients in a separate bowl
Add wet ingredients to dry ingredients
Fold in blueberries
Scoop into greased muffin tray
Bake for 20 - 25 mins
