Blueberry Muffins

 

“Work hard, snack often”

I go from hungry to hangry pretty quick - anyone else feel me? I always try to have healthy and nutritious snacks on hand for the sake of everyone around me. I found this recipe online and love that it’s something different and doesn’t use bananas.

Makes 12 medium muffins

Ingredients

  • 1 cup + 2 tablespoons oat flour

  • 1 cup almond flour

  • 3/4 tsp baking soda

  • 1/4 tsp Himalayan sea salt

  • 2 eggs

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1/2 cup oat milk

  • 1 tbsp olive oil

  • 1 tsp fresh lemon juice

  • 1 cup blueberries

  • Handful of chopped pecans (optional)

Directions

  • Pre-heat oven to 350

  • Line a muffin tray with liners or grease lightly with coconut oil

  • Toss blueberries in 2 tablespoons of oat flour and set aside

  • Mix dry ingredients together in a medium sized bowl

  • Mix wet ingredients in a separate bowl

  • Add wet ingredients to dry ingredients

  • Fold in blueberries

  • Scoop into greased muffin tray

  • Bake for 20 - 25 mins
